I know, I know Mother's Day was months ago...... but I just found some photos of the cupcakes I made for my Mum and wanted to share them.
The top layer were buttercake with raspberry Jam filling and the sweetest pink icing I have ever made in my life, topped with pink sugar crystals, sugar flowers and sprinkles.
The middle layer were also buttercake with raspberry filling, but these were iced with fondant. I stamped the top pieces of fondant using one of my scrapbooking stamps. This was the first time I had used fondant, I definitely need more practice.
The last ones were my favourite. Chocolate mudcake with whole raspberries and chocolate frosting, yum. (The same ones that my Mum and BFF made for my wedding.) My niece Ava was eating one on the Mother's Day weekend and was in the middle of telling me how yummy it was when she spat an entire mouthful out onto the floor. I asked her what was wrong and she said 'berries' with the same disdain that I generally keep for brussel sprouts or mushrooms!
Both recipes are from the Women's Weekly Cupcake book.

Cooper Turns Two
It only feels like yesterday that the Big Man and I went and picked up our tiny little puppy Cooper. I still remember it so clearly. I had finally convinced the Big Man to let me have a puppy and I was ecstatic! We were able to choose between three puppies, a sweet little girl, a shy and nervous boy and a super boisterous boy. I let the Big Man have the final say and he decided on the super boisterous, confident little boy. Cooper!
I have been in love with Cooper since the minute we chose him. It hasn't always been smooth sailing though. Over the last two years we have had quite a few challenges, 12 months of toilet training, separation anxiety, a liking for eating his own poop, a shoe fetish and many more. However in the last 2 months it seems like everything has finally fallen into place with Cooper, he has really settled down. The other day we were actually able to let him off the lead whilst we were walking and he stayed on his best behavior the entire time. He seems to be a lot calmer as well and he hasn't had an accident in the house for over 6 weeks. A miracle!
Although it feels like only yesterday that we bought him home, on the other hand I can't remember what life was like before we adopted Cooper. He is one of the best decisions that we ever made and I love him more than I ever imagined that I could!
Happy Birthday Cooper.

I Didn't Mean It
Today I stayed home from work because I woke up feeling awful. Headachy, sore and really, really tired. And Super Emotional.... Not a great combination, but also not that unexpected seeing as I am officially in my third trimester.
Whilst I was in the middle of a bout of guilt and self pity (guilt for taking another day off work, self pity that I was feeling yuck) I called the Big Man in tears. I told him that I wished the baby would be born so that I wouldn't have to be pregnant anymore. The second I said it I felt insanely guilty. I want this baby more than anything else in the world and am so happy to be pregnant. I am just having a bad day.
I wish I could take it back, but seeing as I can't I would like to officially say "I am very happy to be pregnant and I would like the baby to stay put for at least another 10 weeks". Hopefully the universe reads my blog.

Beyonce
On the day of our wedding anniversary the Big Man and I went and saw Beyonce at the Brisbane Entertainment centre. She was awesome!
I didn't originally plan on going with the Big Man, I was going with my BFF, but she couldn't make it back to Brisbane, then I was going with another friend Cat, but she ended up in hospital (thinking of you Cat, xx). I decided that seeing as it was our wedding anniversary I wouldn't ask anyone else to come with me and I would just take the Big Man along. He wasn't really that excited about going, but I think he had a good time in the end. I sure did!
Before Beyonce started we got to see Jessica Mauboy and Flow Rida, which was really cool. Beyonce was absolutely amazing though. She looked fantastic and sounded even better. She pulled out all of the big songs and finished up with Single Ladies and Halo.
The baby has been giving me a bit of a hard time over the last couple of days and he didn't ease up at the concert. Sitting down for 3 and a half hours was really uncomfortable, but standing up and dancing was worse.... Even though I had a great time, I will think twice about going to a concert next time I am pregnant.
I didn't take my camera with me because I wasn't sure if I would be allowed to take it in. But one of my friends was also there and posted some photos on facebook, so I am just going to repost them and pretend that they are mine (thanks Cara!). Here are some of them....
It was a great night!

Pram
Yesterday the Big Man and I made our first big 'baby purchase', a new pram! Mum is actually buying it for us, but it was on sale so we went ahead and picked it up and managed to save her almost $100 (you can thank me later Mum ;) ). It was so much fun trying out the different prams in the shop, pushing them around, collapsing them and trying to work out how to use all the different features... I think that because it was the first big thing that we have bought for the baby, it really reminded us that in less than 3 months we are going to be having a baby (duh)!
Once we got it home the Big Man put it together. I tried to push Cooper around in it, but he got scared and jumped out. Ollie on the other hand loved it!

One Year Today
One year ago I married the man of my dreams.
Whilst the first year of our marriage hasn't all been smooth sailing, each hurdle has made us stronger and I can easily see myself staying married to the Big Man for the rest of my life.

A couple of weekends ago the Big Man and I got started on the baby's nursery. We've decided to try and paint an alphabet mural (like this one) using three different shades of blue. We're still not sure how we are going to go painting the letters and numbers, but we are going to give it our best shot.
On the Saturday morning we went to Bunnings and picked out our colours and that afternoon the Big Man started painting with our base colour.
By Sunday afternoon the Big Man had finished the first coat and I love it! The colour is exactly what I had hoped for. Blue, but not wishy-washy. I can't wait until the next coat has gone down and we can start working on the mural!
More photos in the next couple of weeks :)
